Goodness – I feel rock frozen in NYC. It’s enough to slather a bit of coconut oil and hang out at my local Bikram shop all day, except that would mean I’d happy to refold myself back into layers which I will not do.
When it gets darn frigid out and my body and bones feel brittle, I whip out my trusted Fagor for a little broth action (Unlike the stove top picture – it’s electric & child locked ). Mine’s got 3 modes: Pressure, Slow and Rice. Given how precious NYC real estate is – including kitchen counter space, I am loving this equipment. Easy Cook and Easy Clean.
While I generally love to simmer my soups and let my veggies melt away lovingly and tenderly like the times of Laura Ingalls - I was impatient to thaw myself out and nourish myself with some healing ginger, onions/garlic and collagen-ful chicken bones*.
Yes – Food as Nourishment, Food as Medicine. Two in One. I love efficacy !
My Healing Broth is lovely as is – I pour in a tea cup and sip away for instant warmth. Or you can use it as a base for any recipe that calls for vegetable or chicken broth.
Nothing beats the chills, the cold, the flu like homemade soupiness – so here’s a WARM cheers to you
ZippyT Fit 20 minute Healing Chicken/Veggie Broth
1 Onion (peeled / cut in 1/2)
1 knob of Ginger (sliced) – You can omit Ginger if you don’t want it Plain, rather than Asian.
3 cloves of Garlic
Stray Vegetables – I found scallions & baby carrots in my Bin.
2 C Water
1 pack of Chicken Thighs (or Wings/Neck/Back)
Pressure Cooker Instruction**:
Dump all above in a Pressure Cooker. High for 20 minutes. Presto Prompto – Ladle Away. You will need to adjust with added Salt to your personal taste.
If stovetop, it will just take a little bit longer. Boil pot of water and dump all ingredients – and then bring down to Simmer/Low for 45 minutes to 1 hour. If you’re using Chicken, I would skim the scum occasionally so you have pretty broth.
